Prepare the Russian Dressing

    Mix the Dressing

    In a medium bowl, combine mayonnaise, ketchup, prepared horseradish, paprika, garlic powder, onion powder, salt, and black pepper. Stir until all ingredients are well mixed. Taste and adjust seasoning if necessary.

Assemble the Reuben

    Layer the Ingredients

    Lay out the slices of rye bread on a clean surface. Spread a generous amount of the Russian dressing on one side of each slice.

    Add Corned Beef

    On two of the slices, place an even layer of corned beef on top of the dressing.

    Add Sauerkraut

    Top the corned beef with a layer of sauerkraut.

    Add Swiss Cheese

    Place two slices of Swiss cheese on top of the sauerkraut.

    Complete the Sandwich

    Top with the remaining slices of bread, dressing side down.

Grill the Sandwich

    Heat the Pan

    In a large skillet, melt the butter over medium heat if using. If not, you can skip this step.

    Grill the Reuben

    Carefully place the assembled sandwiches in the skillet. Grill for about 4-5 minutes on one side until golden brown and the cheese starts to melt. Carefully flip and grill the other side for another 4-5 minutes.

Serve

    Slice and Serve

    Once both sides of the sandwich are golden and the cheese is melted, remove from the skillet. Allow to cool for a minute, then slice in half and serve with extra Russian dressing on the side if desired.
