Method

Preparing the Chips

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water to soak for at least 30 minutes. This helps to remove excess starch and makes them crispier.

    Preheat the Oil

    In a large pot, heat the vegetable oil over medium heat until it reaches 325°F (160°C). Use a thermometer to check the temperature.

    Fry the Chips

    Drain the soaked potatoes and pat them dry with a towel. Fry them in batches for about 5-6 minutes until they are soft but not browned. Remove them and place on a paper towel to drain.

    Increase Oil Temperature

    Increase the oil temperature to 375°F (190°C) to finish frying the chips.

    Return the chips to the hot oil in batches and fry for another 3-4 minutes until golden brown and crispy. Drain on paper towels and season with salt to taste.
