    Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.

    Heat the Oil

    In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Drain the soaked fries and pat them dry with paper towels. Carefully add a batch of fries to the hot oil. Fry for about 5-7 minutes until golden brown and crisp. Remove with a slotted spoon and place on paper towels to drain excess oil. Season with salt.

    Continue frying the remaining batches of fries, ensuring the oil temperature remains consistent.

Gravy

    Make the Roux

    In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2 minutes, stirring constantly to form a roux. It should turn a light golden color.

    Add the Broth

    Slowly add the beef or chicken broth while whisking to avoid lumps. Continue whisking until the mixture thickens, about 5-7 minutes.

    Season the Gravy

    Stir in the soy sauce and black pepper. Adjust the seasoning to taste. If the gravy is too thick, add a bit more broth to reach your desired consistency.

Assembly

    Combine the Components

    On a plate, place a generous serving of hot fries. Top with cheese curds and pour warm gravy over the top.
