    Prepare the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Add the Beer

    Gradually pour in the beer while whisking until you have a smooth batter. Let it sit for about 15 minutes.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Batter the Cod

    Dip each cod fillet into the batter, making sure it is well coated.

    Fry the Cod

    Carefully place the battered cod into the hot oil and fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

For the Fries

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thick fries.

    Rinse and Dry

    Rinse the cut fries under cold water to remove excess starch and then dry them thoroughly with a kitchen towel.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 325°F (160°C).

    Fry the Fries

    Fry the potatoes in batches for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Increase Temperature

    Increase the oil temperature to 375°F (190°C).

    Crisp the Fries

    Fry the potatoes again in batches for 3-4 minutes until they are golden brown and crispy. Drain on paper towels and sprinkle with salt.

For the Tartar Sauce

    Mix Ingredients

    In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, fresh dill, and salt. Mix well until combined.

    Chill

    Cover the tartar sauce and refrigerate until ready to serve.
