    Prepare the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in cold sparkling water until the batter is smooth and thick.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Prepare the Potatoes

    Peel and cut the potatoes into thick fries. Rinse them under cold water to remove excess starch.

    In a separate pot or fryer, heat oil to 350°F (175°C). Add the cut potatoes in batches and fry for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then sprinkle with salt to taste.
