Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that the cakes bake evenly.

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.

  3. 3

    Melt Chocolate and Butter

In a medium saucepan over low heat, melt the semi-sweet chocolate and unsalted butter together, stirring frequently until smooth. Remove from heat and let it cool slightly.

Mixing the Batter

  1. 4

    Combine Dry Ingredients

In a large bowl, sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and a pinch of salt.

  2. 5

    Add Eggs and Vanilla

Add the large eggs, large egg yolk, and vanilla extract to the dry ingredients. Mix until fully combined.

  3. 6

    Incorporate Chocolate Mixture

Slowly add the melted chocolate and butter mixture to the batter, stirring gently until the mixture is smooth and homogeneous.

Baking the Cakes

  1. 7

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

  4. 10

    Invert the Cakes

Carefully run a knife around the edges of the ramekins, then invert each cake onto a plate. Serve immediately.

    Garnish

Dust the cakes with powdered sugar, and serve with a scoop of vanilla ice cream and fresh berries on the side.
