    Prepare the Pistou

    In a food processor, combine the basil, garlic, pine nuts, lemon juice, and a pinch of salt and pepper. Blend until smooth, drizzling in olive oil until the mixture reaches a pesto-like consistency. Set aside.

    Prepare the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced summer squash and fennel, season with salt and pepper, and sauté until tender, about 5-7 minutes. Remove from heat and set aside.

    Prepare the Sea Bass

    Preheat your oven to 400°F (200°C). Rinse the whole sea bass and pat it dry with paper towels. Make 3 diagonal slashes on each side of the fish. Rub the fish with the remaining olive oil, salt, and pepper. Zest the lemon over the fish and place the lemon halves inside the cavity.

    Bake the Fish

    Place the fish on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.

    Serve

    On a serving platter, layer the sautéed summer squash and fennel. Place the baked sea bass on top and drizzle with the pistou. Serve immediately.
