Cooking Instructions

  1. 1

    Prepare the Blackberries

In a small saucepan, add the blackberries and a little bit of water. Cook over medium heat until the blackberries break down and form a sauce. Set aside.

  2. 2

    Season the Foie Gras

Season the foie gras slices with salt and black pepper on both sides.

  3. 3

    Sear the Foie Gras

In a skillet over medium-high heat, melt 15 grams of salted butter. Once hot, carefully place the foie gras slices in the skillet. Sear for about 30 seconds on each side until golden brown. Remove and set aside.

  4. 4

    Prepare the Plate

On a serving plate, place the flapjack pieces. Top with the seared foie gras and drizzle with the blackberry sauce. Garnish with remaining blackberries.

  5. 5

    Finish with Butter

In the same skillet, add the remaining salted butter and let it melt. Drizzle it over the assembled dish before serving.
