Prepare the Leeks

Trim the leeks, cut them in half lengthwise, and slice them into thin half-moons. Rinse well in cold water to remove any grit.

Sauté the Leeks

In a large skillet, melt the butter over medium heat. Add the garlic (minced) and sauté for 1-2 minutes until fragrant. Add the leeks, salt, and pepper, and cook until the leeks are softened, about 8-10 minutes.

Mix the Gratin Base

In a large bowl, combine the sautéed leeks, heavy cream, crumbled Roquefort cheese, and chopped walnuts. Mix well to combine all ingredients.

Prepare for Baking

Preheat your oven to 180°C (350°F). Transfer the leek mixture into a greased baking dish and spread it evenly.

Top with Breadcrumbs

Sprinkle breadcrumbs evenly over the top of the leek mixture. Drizzle a little olive oil or melted butter over the breadcrumbs for added crispiness.

Bake

Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and bubbling.

Garnish and Serve

Remove from the oven, let it cool slightly, then garnish with fresh parsley before serving.
