Preparation

Beef Tartare Preparation

1. Prepare the Beef

Finely chop the beef tenderloin and place it in a mixing bowl.

2. Mix Ingredients

Add egg yolk, capers, Dijon mustard, Worcestershire sauce, shallots, parsley, salt, and black pepper to the bowl and mix gently until well combined.

3. Chill

Cover the mixture and refrigerate until ready to serve.

Shoestrings Preparation

4. Prepare Potatoes

Peel the potatoes and cut them into thin strips to make shoestring fries.

5. Fry Shoestrings

Heat duck fat in a deep pan until hot. Fry the potato strips until golden and crispy, about 3-4 minutes. Remove and drain on paper towels, then season with salt.

Duck Fat Toast Preparation

6. Prepare Bread

Spread duck fat on one side of each slice of bread.

7. Toast

Place the slices in a hot skillet, duck fat side down, and toast until golden brown. Season with salt before serving.

Assembly

8. Plate the Dish

On each plate, place a serving of beef tartare alongside a pile of shoestrings and a couple of slices of duck fat toast.
