Preparation Steps

  1. 1

    Prepare the Carrots

Preheat your oven to 200°C (400°F). Peel the carrots and cut them into evenly sized sticks.

  2. 2

    Season the Carrots

In a mixing bowl, toss the carrot sticks with olive oil, salt, and black pepper until well coated.

  3. 3

    Bake the Carrots

Spread the seasoned carrots on a baking sheet in a single layer. Bake in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized.

  4. 4

    Prepare the Topping

While the carrots are baking, lightly toast the pine nuts in a dry skillet over medium heat until golden brown, stirring frequently.

  5. 5

    Assemble the Dish

Once the carrots are done, remove them from the oven and place them on a serving platter. Crumble the aged chèvre over the top, sprinkle with toasted pine nuts, and garnish with fresh nasturtium leaves.

  6. 6

    Serve

Serve warm as a side dish or a light main course.
