Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients
In another bowl, mix the buttermilk, eggs, red food coloring, vanilla extract, and melted butter until smooth.

Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake. Sprinkle chocolate chips on top before flipping. Cook until bubbles form on the surface, then flip and cook until golden brown.

Prepare Cream Cheese Drizzle
In a small bowl, whisk together cream cheese, powdered sugar, and a little milk until smooth. Adjust the consistency with more milk if necessary.

Stack the pancakes on a plate, drizzle with cream cheese mixture, and top with additional chocolate chips if desired.
