Prepare the Potatoes

Peel the Russet potatoes and grate them using a box grater or food processor. Soak the grated potatoes in cold water for about 10 minutes, then drain and pat dry with a clean kitchen towel.

Sauté the Onion

Finely chop the onion. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Combine Ingredients

In a large bowl, mix the grated potatoes with the sautéed onions. Season with salt and black pepper, and mix well.

Cook the Hash Browns

In the same skillet, add the remaining vegetable oil and heat over medium-high heat. Once hot, add the potato mixture in an even layer. Cook for about 5-7 minutes until the bottom is golden and crispy. Flip the hash browns in sections and cook the other side for another 5-7 minutes until golden brown.

Serve

Once cooked, remove the hash browns from the skillet and drain on paper towels. Serve hot as a side dish or breakfast item.
