    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 10 minutes or until tender, then drain and set aside.

    Cook the Chorizo

    In a large skillet, heat olive oil over medium heat. Add the chorizo and cook until browned and fully cooked, about 5-7 minutes.

    Combine Ingredients

    Add the boiled potatoes to the skillet with the chorizo. Season with salt and black pepper. Cook for another 5-10 minutes, stirring occasionally until the potatoes are golden brown.

    Cook the Eggs

    In a separate pan, fry the eggs to your liking (sunny-side-up, over easy, etc.).

    Serve

    Divide the chorizo hash onto plates, top each serving with a fried egg, and garnish with sour cream, pico de gallo, guacamole, and sliced jalapeños to taste.
