Chicken Apple Sausage, Mushrooms, Green Onions, Cheese, Avocado and Sour Cream

In a skillet over medium heat, add olive oil and cook the chicken apple sausage until browned, about 5-7 minutes. Remove from skillet and slice into bite-sized pieces.

Prepare the Sausage

In the same skillet, add sliced mushrooms and chopped green onions. Sauté for 3-4 minutes until softened.

Sauté the Vegetables

In a bowl, whisk together the eggs, salt, and black pepper until fully combined.

Whisk the Eggs

Pour the egg mixture into the skillet with the vegetables and let it cook undisturbed for 2-3 minutes until the edges start to set.

Cook the Omelette

Sprinkle the cooked sausage and shredded cheddar cheese over one half of the omelette. Allow to cook for another minute until the cheese melts.

Add Fillings

Carefully fold the omelette in half over the fillings and slide it onto a plate. Top with sliced avocado and a dollop of sour cream before serving.
