Method
Preparing Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl, and gently fold in the vinegar mixture. Allow to cool to room temperature.
Preparing the Ahi Tuna

Slice the Tuna
Using a sharp knife, slice the Ahi tuna into bite-sized cubes. Place them in a bowl.

Marinate the Tuna
If desired, lightly drizzle the sliced tuna with a bit of soy sauce for flavor, and toss gently.
Making the Sesame Dressing

Combine Ingredients
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and sesame seeds until well combined.
Assembling the Poke Bowl

Drizzle Dressing
Drizzle the sesame dressing over the assembled bowl.

Garnish with sliced green onions, radish, and pickled ginger to taste.
