Preparation of Mahi Mahi

    Marinate the Mahi Mahi

    In a large bowl, combine olive oil, lemon juice, garlic powder, paprika, cayenne pepper, salt, and black pepper. Mix well to create a marinade.

    Add the Fish

    Add the Mahi Mahi fillets to the marinade, ensuring each piece is well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Cooking the Mahi Mahi

    Preheat the Grill or Skillet

    Preheat your grill or cast-iron skillet to medium-high heat. If using a skillet, add a little olive oil to prevent sticking.

    Cook the Fish

    Remove the Mahi Mahi from the marinade and place it on the grill or skillet. Cook for about 4-5 minutes per side, or until the fish flakes easily with a fork and is opaque in the center.

    Optional Blackening

    For a blackened version, sprinkle the blackening seasoning (thyme, oregano, onion powder) over the fillets before cooking. This will give a smoky flavor and a darker crust.

Serving

    Once cooked, transfer the Mahi Mahi to a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side.
