Preparing the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, salt, and black pepper. Place the salmon fillets in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Remove salmon from marinade and place on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

    Prepare the Vegetables

    Wash and trim the asparagus. Cut the bell peppers into strips and slice the zucchini into rounds.

    On a grill pan or directly on the grill, toss the prepared vegetables with a little olive oil, salt, and pepper. Grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Cooking Quinoa

    Rinse the quinoa under cold water in a fine mesh strainer to remove bitterness.

    In a saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.
