Filet Mignon

Prepare the Steak
Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes.

Season the Steak
Pat the steaks dry with paper towels, then season generously with salt and black pepper on both sides.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the filet mignon and sear for 4-5 minutes on each side for medium-rare, adjusting the time for desired doneness.

Rest the Steak
Remove the steaks from the skillet and let them rest for at least 5 minutes before serving.
Garlic Mashed Potatoes

Cook the Garlic
In the last 5 minutes of cooking the potatoes, add the garlic cloves to the boiling water to soften.

Mash the Potatoes
Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
Asparagus

Prepare the Asparagus
Rinse the asparagus under cold water and trim the tough ends.

Season and Roast
Toss the asparagus with olive oil, salt, black pepper, and lemon juice. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for 10-15 minutes until tender.
