Calamari

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Mix Dry Ingredients

In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

    Coat the Calamari

Dredge the calamari rings in the flour mixture, making sure they are evenly coated. Shake off any excess flour.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the oil to 375°F (190°C).

  5. 5

    Fry the Calamari

Fry the calamari rings in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Spicy Aioli Preparation

  1. 6

    Combine Ingredients

In a small bowl, mix together mayonnaise, sriracha sauce, lemon juice, and minced garlic until smooth.

  2. 7

    Adjust Seasoning

Taste the aioli and adjust the spiciness by adding more sriracha if desired.

Marinara Sauce Preparation

  1. 8

    Sauté Onions and Garlic

In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

  2. 9

    Add Tomatoes and Seasoning

Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer.

  3. 10

    Finish the Sauce

Let the sauce simmer for about 15-20 minutes. Stir in chopped fresh basil just before serving.
