Prepare the Meat Mixture

In a large bowl, combine the ground pork shoulder and pork fat. Mix well until fully combined.

Add Spices

Add minced garlic, paprika, black pepper, cayenne pepper, salt, dried thyme, and liquid smoke to the meat mixture. Mix thoroughly to ensure even distribution of spices.

Stuff the Sausage

Rinse the hog casings under cold water and soak them in warm water for about 30 minutes. Stuff the sausage mixture into the casings, being careful not to overstuff, and tie off the ends securely.

Cook the Sausage

Preheat your smoker or grill. Smoke the sausages at 225°F (107°C) for about 2-3 hours or until they reach an internal temperature of 160°F (71°C).

Cool and Store

Remove the sausages from the smoker and let them cool at room temperature. Store in the refrigerator for up to a week, or freeze for longer storage.
