Method

Cooking Directions

  1. 1

    Prepare the Lobster Stock

In a large pot, melt the butter over medium heat. Add the lobster shells and cook until they turn bright red, about 5-7 minutes.

  2. 2

    Add Vegetables

Stir in the chopped onion, carrot, celery, and minced garlic. Cook for another 5 minutes until the vegetables begin to soften.

  3. 3

    Add Tomato Paste and Wine

Add the tomato paste and dry white wine, stirring well to combine. Bring to a simmer and cook for 5 minutes.

  4. 4

    Add Fish Stock

Pour in the fish stock and bring to a boil. Reduce heat and let it simmer for 30 minutes to allow the flavors to meld.

  5. 5

    Strain the Stock

Strain the mixture through a fine mesh sieve into a clean pot, discarding the solids. Return the liquid to the pot.

  6. 6

    Add Cream and Seasonings

Stir in the heavy cream, salt, black pepper, chopped parsley, and lemon juice. Heat gently until warmed through, but do not boil.

  7. 7

    Serve

Ladle the bisque into bowls and garnish with additional parsley if desired. Serve hot.
