Soak the Rice Noodles
In a large bowl, soak the rice noodles in hot water for about 20-30 minutes or until soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together the soy sauce, fish sauce, brown sugar, and lime juice. Stir until the sugar is dissolved.
Cooking

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add shrimp or chicken and cook until they are fully cooked (about 3-5 minutes for shrimp and 5-7 minutes for chicken). If using tofu, cook until golden brown. Remove from the skillet and set aside.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add the bell pepper, carrot, and green onions. Stir-fry for about 2-3 minutes until vegetables are tender but still crisp.

Combine Noodles and Sauce
Add the drained rice noodles and the prepared sauce to the skillet. Toss everything together and cook for another 2-3 minutes until heated through.

Add Protein and Bean Sprouts
Return the cooked shrimp, chicken, or tofu back into the skillet. Add the bean sprouts and toss everything together for another minute until well combined.
Serving

Garnish and Serve
Transfer the Pad Thai to serving plates. Top with chopped peanuts, fresh cilantro, and lime wedges. Serve immediately.
