Preheat the Oven
Preheat your oven to 400°F (200°C).

Assemble Loaded Potato Skins

Cut and Scoop
Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

Add Toppings
Place the potato skins on a baking sheet, brush the insides with olive oil, and season with salt and pepper. Fill each skin with shredded cheddar cheese, crumbled bacon, and sliced green onions.

Bake Again
Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve

Plate and Serve
Remove the loaded potato skins from the oven and serve immediately with a side of sour cream for dipping.
