Potato Skins

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Potatoes

Wash the russet potatoes thoroughly and dry them. Using a fork, poke several holes into each potato to allow steam to escape while baking.

  3. 3

    Bake the Potatoes

Rub the potatoes with olive oil and sprinkle with salt and black pepper. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

Assemble Loaded Potato Skins

  1. 4

    Cut and Scoop

Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

  2. 5

    Add Toppings

Place the potato skins on a baking sheet, brush the insides with olive oil, and season with salt and pepper. Fill each skin with shredded cheddar cheese, crumbled bacon, and sliced green onions.

  3. 6

    Bake Again

Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve

  1. 7

    Plate and Serve

Remove the loaded potato skins from the oven and serve immediately with a side of sour cream for dipping.
