Method

Prepare the Salad Base

  1. 1

    Wash and Chop

Rinse the mixed greens under cold water and dry them with a salad spinner or paper towels. Chop the cucumber and slice the red onion thinly. Cut the cherry tomatoes in half.

  2. 2

    Combine

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.

Cook the Salmon

  1. 3

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 4

    Season Salmon

Place the salmon fillet on a baking sheet. Drizzle with olive oil and lemon juice. Sprinkle garlic powder, salt, and black pepper over the fillet.

  3. 5

    Bake

Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.

  4. 6

    Cool and Flake

Remove the salmon from the oven and let it cool for a few minutes. Then, flake the salmon into bite-sized pieces with a fork.

Make Mango Dressing

  1. 7

    Prepare Mango

Peel and pit the ripe mango. Cut the flesh into chunks.

  2. 8

    Blend Dressing

In a blender, combine the mango chunks, honey, rice vinegar, olive oil, salt, and black pepper. Blend until smooth.

Assemble the Salad

  1. 9

    Combine Salad and Salmon

Add the flaked salmon to the salad bowl with the mixed greens and toss gently.

  2. 10

    Dress the Salad

Drizzle the mango dressing over the salad and toss gently to coat the ingredients evenly.

  3. 11

    Serve

Divide the salad into serving plates and enjoy!
