Preparation of Ingredients
1. Prepare the Tofu
Drain the firm tofu and press it between paper towels to remove excess moisture. Cut the tofu into bite-sized cubes.
2. Cook the Noodles
Cook the wide rice noodles according to the package instructions. Drain and set aside.
3. Chop the Vegetables
Chop the broccoli into small florets, julienne the carrot, mince the garlic, and slice the green onions.

4. Fry the Tofu
In a non-stick pan, heat 2 tablespoons of chili oil over medium heat. Add the tofu cubes and cook until golden brown and crispy on all sides. Remove the tofu from the pan and set aside.
5. Stir-Fry the Vegetables
In the same pan, add a bit more chili oil if needed. Add minced garlic and sauté until fragrant. Add broccoli and carrots, stir-frying until they are tender yet crisp.
6. Combine Noodles and Sauce
Add the cooked rice noodles to the pan with the vegetables. Pour in the soy sauce, dark soy sauce, and sugar, and toss everything together until the noodles are well coated.
7. Add Tofu
Gently fold in the fried tofu and sliced green onions. Cook for an additional 2-3 minutes to heat through.
Serving
8. Plate the Dish
Serve the Pad See Ew Mee Tofu hot, garnished with pickled relish and lime wedges on the side for squeezing over the dish.
