Soak Rice Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Prep Proteins
Peel and devein the shrimp. Slice the chicken breast into thin strips.

Chop Vegetables
Chop the green onions, julienne the carrots, and mince the garlic.
Cooking

Heat Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.

Cook Chicken
Add the sliced chicken to the skillet and stir-fry for about 3-4 minutes until it starts to brown.

Add Shrimp
Add the shrimp to the pan and cook for an additional 2-3 minutes until they turn pink.

Add Noodles and Sauce
Add the soaked rice noodles to the skillet along with the fish sauce, soy sauce, tamarind paste, and sugar. Toss everything together for about 3-4 minutes until well combined.

Add Bean Sprouts and Green Onions
Fold in the bean sprouts and chopped green onions. Stir-fry for another 1-2 minutes.

Remove from heat and serve hot, garnished with chopped peanuts, lime wedges, and cilantro.
