Preparation of Sticky Rice

    Rinse the Rice

    Rinse the glutinous rice under cool running water until the water runs clear to remove excess starch. This helps achieve the right texture.

    Soak the Rice

    Soak the rinsed rice in water for at least 4 hours or overnight, ideally. This allows the rice to absorb water and become soft.

    Steam the Rice

    After soaking, drain the rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel. Steam the rice over boiling water for about 30-40 minutes until it becomes tender and sticky.

Preparing Coconut Sauce

    Make Coconut Sauce

    In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium until the sugar dissolves but do not let it boil.

    Reserve Sauce

    Once the mixture is well combined and heated through, remove from heat and set aside about 1/4 cup of the coconut sauce for drizzling on top later.

Combining Ingredients

    Combine Rice and Sauce

    Once the rice is steamed, transfer it to a mixing bowl and pour the remaining coconut sauce over the rice. Stir gently to combine and let it sit for about 10-15 minutes to absorb the flavors.

    While the rice is soaking or steaming, peel the mangoes. Cut the flesh into thin slices or small cubes.

    To serve, place a generous portion of the sticky rice on a plate, top with fresh mango slices, and drizzle the reserved coconut sauce over the top. Garnish with sesame seeds or mung beans if desired.
