Prepare the Curry Broth

Cook the Base

In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant.

Combine Ingredients

Pour in the coconut milk and vegetable broth, stirring well. Add the soy sauce, lime juice, brown sugar, and turmeric powder. Stir to combine.

Simmer

Bring the mixture to a gentle simmer, then reduce the heat to low. Let it simmer for about 10 minutes to allow the flavors to meld.

Cook the Noodles

Boil the Noodles

In a separate pot, bring water to a boil. Add the egg noodles and cook according to the package instructions, usually about 5-7 minutes.

Drain and Set Aside

Once cooked, drain the noodles and set them aside.

Prepare the Tofu

Fry the Tofu

In a frying pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the crispy tofu and fry until golden brown and crispy, about 5 minutes.

Assemble the Dish

Combine Noodles and Broth

In a bowl, place a portion of the cooked noodles. Ladle the hot curry broth over the noodles.

Top with Tofu

Add the crispy tofu on top of the noodles.

Garnish

Top with chopped green onions, fresh cilantro, and sliced red chili. Serve with lime wedges on the side for squeezing over.
