    Sprinkle the cut sides of the tomatoes with kosher salt. This helps to draw out moisture and enhances flavor. Let them sit for about 30 minutes.

Drying the Tomatoes

    Preheat your oven to 200°F (93°C). This low temperature will help to dehydrate the tomatoes slowly.
