Cook the Lobster

In a large pot, bring salted water to a boil. Add the lobster tails and cook for 8-10 minutes until they turn bright red. Remove from water, let cool, then remove meat from shells, chop into small pieces, and set aside.

Sauté Vegetables

In the same pot, melt the butter over medium heat. Add chopped onion, celery, and carrots. Sauté for about 5 minutes until the vegetables are softened. Add minced garlic and sauté for an additional minute.

Add Tomato Paste

Stir in the tomato paste and cook for 2-3 minutes, allowing it to caramelize slightly.

Making the Broth

Combine Ingredients

Pour in the white wine, scraping any bits off the bottom of the pot. Add in the fish stock, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce to a simmer.

Simmer

Let the broth simmer for about 20 minutes to allow the flavors to develop.

Add Lobster Meat

Remove bay leaves and add the chopped lobster meat into the soup. Stir to combine.

Finishing Touches

Add Cream

Stir in the heavy cream and lemon juice, mixing thoroughly. Heat gently, but do not boil.

Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh herbs if desired.
