Prep the Beets

Wash the baby beets thoroughly under cold running water to remove any dirt. Trim the tops and tails of each beet using a sharp knife.

Boil the Beets

Place the cleaned beets in a pot and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cover the pot. Cook for about 30-40 minutes or until the beets are fork-tender.

Cool and Peel

Once the beets are cooked, drain them and let them cool slightly. Once cool enough to handle, slip off the skins using your fingers or a paper towel.

In a mixing bowl, combine the olive oil, red wine vinegar, honey, minced garlic, fresh thyme, salt, and black pepper. Whisk together until well combined.

Place the peeled baby beets in a large sealable plastic bag or a glass container. Pour the marinade over the beets, ensuring they are well coated.
