Marinate the Lamb

In a bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, salt, and black pepper. Whisk together until well combined.

Prepare the Lamb

Place the leg of lamb in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours or overnight for best results.

Preheat the Oven

Preheat your oven to 350°F (175°C).

Prepare the Vegetables (if using)

If you are adding vegetables, peel and chop them into large chunks. Place them in a roasting pan.

Roast the Lamb

Remove the lamb from the marinade (discard marinade) and place it on top of the vegetables in the roasting pan. Roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Baste the lamb with pan juices every 30 minutes.

Rest the Lamb

Once cooked, remove the lamb from the oven and cover it loosely with foil. Let it rest for 15-20 minutes before carving. This allows the juices to redistribute.
