Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Peppers

Wash the red and yellow bell peppers under running water. Cut each pepper in half, remove the seeds and stems, and slice them into strips.

  3. 3

    Prepare the Garlic

Peel the garlic cloves and finely chop them or use a garlic press.

Roasting

  1. 4

    Combine Ingredients

In a large mixing bowl, combine the sliced red and yellow bell peppers, chopped garlic, olive oil, salt, black pepper, and balsamic vinegar. Toss everything together until the peppers are well coated.

  2. 5

    Arrange on Baking Sheet

Spread the coated peppers in a single layer on a baking sheet lined with parchment paper.

  3. 6

    Roast the Peppers

Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the peppers are tender and slightly charred, stirring halfway through.

Finishing

  1. 7

    Add Fresh Basil

If using, sprinkle fresh basil over the roasted peppers once they are out of the oven. Toss lightly.

  2. 8

    Serve

Serve the roasted red and yellow peppers warm or at room temperature as a side dish or topping for salads and sandwiches.
