    Start by trimming any excess fat from the picanha, leaving a layer about 1 cm thick for flavor and moisture during cooking.

    Season the Picanha

    In a small bowl, mix together the kosher salt, black pepper, and garlic powder. Rub the mixture evenly over the entire surface of the picanha. Allow the meat to rest at room temperature for 30 minutes to absorb the flavors.

    Preheat the Grill

    Preheat your grill (or oven) to high heat, about 230-260°C (450-500°F). If using a charcoal grill, ensure the coals are ashed over and very hot.

    Brush the grill grates with olive oil to prevent sticking. Place the picanha on the grill, fat side down. Sear for about 5-7 minutes until a nice crust forms.
