Start by trimming any excess fat from the picanha, leaving a layer about 1 cm thick for flavor and moisture during cooking.

In a small bowl, mix together the kosher salt, black pepper, and garlic powder. Rub the mixture evenly over the entire surface of the picanha. Allow the meat to rest at room temperature for 30 minutes to absorb the flavors.

Carefully flip the picanha to the other side and cook for an additional 5-7 minutes. For medium-rare, the internal temperature should reach 55-60°C (130-140°F).
