Preparing the Milk

    Heat the Milk

    In a large pot, pour 4 cups of whole milk and heat over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Once the milk reaches 190°F, remove it from the heat and add 1 tablespoon of lemon juice. Stir gently for about 1 minute. You should see the curds starting to form.

    Add Rennet

    Dissolve 1 teaspoon of rennet in a small amount of cool water and add it to the milk mixture. Stir gently for about 30 seconds, then let it sit undisturbed for 5-10 minutes until the curd forms.

Cutting and Cooking the Curd

    Cut the Curd

    Once the curd has formed, use a knife to cut it into 1-inch cubes. Allow it to sit for 5 minutes to firm up.

    Cook the Curd

    Gently heat the curds over low heat, stirring frequently until they reach 105°F (40°C). This should take about 5-10 minutes.

    Using a slotted spoon, transfer the curds to a large bowl lined with cheesecloth. Allow the whey to drain out completely.

Shaping the Mozzarella

    Gather the cheesecloth and gently knead the curds together, adding 1 tablespoon of salt while kneading to incorporate flavor.

    Stretch the Cheese

    Heat a pot of water until hot but not boiling. Place the curds in the hot water for about 1-2 minutes, then stretch and fold the cheese repeatedly until smooth and elastic.

    Shape the stretched cheese into balls or logs, then place them in a bowl of ice water to cool and firm up.
