Prepare Mint Infusion
In a medium saucepan, combine the fresh mint leaves and water. Bring to a boil over medium heat, then reduce the heat and simmer for about 10 minutes to allow the mint to infuse the water.

Strain the Mint
After simmering, remove the saucepan from heat and strain the mixture through a fine mesh strainer or cheesecloth into a large bowl or another saucepan. Press the mint leaves to extract as much liquid as possible.

Combine Ingredients
In the same saucepan, combine the mint-infused liquid with apple cider vinegar and granulated sugar. Stir well to dissolve the sugar completely.

Cook the Mixture
Bring the mixture to a rolling boil over medium-high heat. Once boiling, add the liquid pectin and continue to boil for 1-2 minutes, stirring constantly.

Add Food Coloring (Optional)
If desired, add a teaspoon of green food coloring to the boiling mixture to achieve a vibrant green color. Stir thoroughly.

Test for Doneness
To check if the jelly is ready, drop a small amount onto a plate and let it cool for a minute. Push the edge of the jelly with your finger; if it wrinkles, it's done.

Jar the Jelly
Remove the saucepan from heat. Pour the hot mint jelly into sterilized jars, leaving about 1/4 inch headspace. Seal the jars with sterilized lids.

Process the jars in a boiling water canner for 5-10 minutes to ensure they are sealed properly. Adjust time based on your altitude.

Allow the jars to cool completely on a clean towel or wire rack. Once cooled, store in a cool, dark place. The mint jelly will be ready to enjoy after 24 hours.
