Prepare the Vegetables
Wash all the vegetables thoroughly. Cut the cauliflower into small florets, slice the carrots, green bell pepper, and celery into bite-sized pieces. Mince the garlic cloves.

In a medium saucepan, combine the white vinegar, water, salt, dried oregano, red pepper flakes, black peppercorns, and bay leaves. Bring the mixture to a boil over medium heat, stirring occasionally until the salt is dissolved.

Combine Vegetables and Brine
Once the brine is boiling, remove it from heat. In a large mixing bowl, combine the prepared vegetables and optional add-ins (if using). Pour the hot brine over the vegetables and stir to ensure they are well coated.

Cool and Refrigerate
Allow the jars to cool at room temperature for about 30 minutes, then refrigerate. The giardiniera will be ready to eat after 24 hours but is best after a few days to allow the flavors to meld.
