To Prepare the Caramel

Make the Caramel
In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar dissolves.

Cook the Caramel
Continue to cook the mixture without stirring until it turns a golden amber color, about 8-10 minutes. Be careful not to burn it.

Pour the Caramel
Quickly pour the caramel into the bottom of a round cake pan or flan mold, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Pour the Custard
Pour the custard mixture over the hardened caramel in the cake pan.

Bake the Flan
Place the cake pan in a larger baking dish filled with water (a water bath). Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.
To Serve the Flan

Cool and Refrigerate
Once baked, remove the flan from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.

Unmold the Flan
To serve, run a knife around the edges of the flan, then invert it onto a plate. The caramel will flow over the flan.
