Soak the Beans
Rinse the black beans under cold water and place them in a large bowl. Cover them with 8 cups of water and let them soak overnight.

Prepare the Meats
Cut the pork shoulder, smoked bacon, and beef short ribs into bite-sized pieces. Slice the chorizo sausage into rounds.

Chop the Vegetables
Dice the onion, green bell pepper, and tomato. Mince the garlic cloves.

Cook the Meats
In a large pot over medium heat, add the smoked bacon. Cook until crispy, about 5 minutes. Add the chorizo and cook for another 3 minutes. Add the pork shoulder and beef short ribs, cooking until browned on all sides.

Drain and rinse the soaked black beans. Add them to the pot along with the bay leaves, cumin powder, paprika, salt, black pepper, and red pepper flakes. Stir to combine.

Simmer the Feijoada
Pour in enough water to just cover the beans and meat mixture, about 4-6 cups. Bring to a boil, then reduce heat to low, cover, and let it simmer for 2-3 hours, stirring occasionally, until the beans are tender and the flavors meld.
