Preparing the Couscous
1. Boil Water
In a medium saucepan, bring 1.25 cups of water to a boil. Add 0.5 tsp of salt to the water.
2. Cook Couscous
Once the water is boiling, remove the saucepan from heat and add 1 cup of couscous. Stir briefly, cover, and let it sit for about 5 minutes until the couscous absorbs the water.
3. Fluff Couscous
After 5 minutes, use a fork to fluff the couscous, breaking up any clumps.
Chopping Vegetables
4. Chop Cherry Tomatoes
Halve 1 cup of cherry tomatoes and set aside.
5. Dice Cucumber
Peel and dice 1 medium cucumber into small cubes.
6. Chop Red Bell Pepper
Remove the seeds and dice 1 medium red bell pepper into small pieces.
7. Chop Red Onion
Finely chop 0.5 medium red onion.
8. Chop Parsley
Rinse and finely chop 0.5 cups of fresh parsley.
Making the Dressing
9. Combine Ingredients
In a small bowl, combine 3 tbs of olive oil, 2 tbs of lemon juice, 1 tsp of Dijon mustard, and 0.25 tsp of black pepper.
10. Whisk Together
Whisk the dressing ingredients together until well emulsified.
Combining the Salad
11. Mix Salad Ingredients
In a large bowl, combine the fluffed couscous, chopped cherry tomatoes, diced cucumber, diced red bell pepper, chopped red onion, and chopped parsley.
12. Add Dressing
Pour the dressing over the salad and toss gently to combine all ingredients evenly.
