In a large saucepan, combine the water and granulated sugar. Heat over medium heat, stirring continuously until the sugar has fully dissolved.

Once the sugar has dissolved, stir in the citric acid until it is completely mixed in. Remove the saucepan from heat and allow it to cool slightly.

Prepare the Fruit
If using whole fruits, wash them thoroughly. For citrus fruits, zest and juice them. For berries, simply wash and mash them slightly to release their juices.

In a large bowl, combine the prepared fresh fruit, fresh mint leaves, and vanilla extract. Mix them well together.

Pour the slightly cooled syrup over the fruit mixture. Stir gently to combine, then cover and let it sit at room temperature for about 1-2 hours to allow the flavors to meld.

After the infusion time, strain the mixture through a fine-mesh sieve or cheesecloth into a clean glass jar or bottle. Press down on the fruit solids to extract as much liquid as possible.
