Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, salt, and ground nutmeg until well combined.

Mix Wet Ingredients
In another large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and grated carrots.

Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped walnuts or pecans and raisins.

Divide the batter evenly between the prepared cake pans.
Baking

Place the cake pans in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted in the center of the cakes comes out clean.

Prepare Cream Cheese Frosting
In a mixing bowl, beat together 8 oz of cream cheese, 1/2 cup of unsalted butter, 4 cups of powdered sugar, and 1 tsp of vanilla extract until smooth and creamy.

Once the cakes are completely cool, spread a layer of frosting between the two layers and then frost the top and sides of the cake.
