Method

Meat Preparation

  1. 1

    Grill the Flank Steak

Preheat your grill to high heat. Season the flank steak with salt and black pepper. Grill for about 5-7 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

  2. 2

    Grill the Chicken Thighs

Season the chicken thighs with salt and black pepper. Grill them for about 6-8 minutes on each side until fully cooked and the juices run clear. Allow them to rest for 5 minutes before slicing.

Side Preparation

  1. 3

    Prepare Black Beans

In a saucepan, heat the black beans over medium heat until warmed through. Season with salt to taste and let simmer for 5 minutes.

  2. 4

    Fry Plantains

Peel and slice the plantains diagonally into 1-inch thick slices. Heat oil in a frying pan over medium heat. Fry the slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels and season with salt.

Chimichurri Preparation

  1. 5

    Make Chimichurri Sauce

In a food processor, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Pulse until all ingredients are finely chopped and well mixed. Adjust seasoning to taste.

Serving

  1. 6

    Assemble the Plate

On a plate, arrange the grilled flank steak and chicken thighs. Add the black beans and fried plantains on the side. Serve with Brazilian cheese bread and a generous drizzle of chimichurri sauce over the meats.
