Boil the Lobster Tails
In a large pot, bring 4 cups of water to a boil and add 1 tsp of salt. Carefully place the lobster tails in the boiling water and cook for 6-8 minutes until they turn bright red. Remove from heat and allow to cool.

Extract the Lobster Meat
Once cooled, remove the lobster meat from the shells and chop it into bite-sized pieces. Set aside.

In a large pot, melt 4 tablespoons of unsalted butter over medium heat. Add 1 cup of diced shallots and sauté for about 3-4 minutes until translucent. Stir in 3 teaspoons of minced garlic and cook for another minute until fragrant.

Add 2 tablespoons of tomato paste, 1 teaspoon of dried thyme, 1 bay leaf, 1 teaspoon of cayenne pepper, and 1 teaspoon of black pepper to the pot. Stir well to combine and cook for about 2 minutes.

Combine Stock and Cream
Pour in 4 cups of fish or seafood stock and 2 cups of heavy cream. Bring the mixture to a gentle simmer and allow to cook for about 15-20 minutes, stirring occasionally.

Incorporate Lobster Meat
Add the chopped lobster meat to the bisque and simmer for an additional 5 minutes. Remove the bay leaf before serving.
