Crust

1. Prepare the crust

In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until well combined.

2. Form the crust

Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes until lightly golden. Remove and let cool.

3. Prepare the banana mixture

In a skillet over medium heat, melt 1 tablespoon of unsalted butter. Add brown sugar and stir until melted and bubbling.

4. Add bananas

Slice 3 ripe bananas and add them to the skillet. Cook for about 2-3 minutes, until the bananas are caramelized, stirring gently. If using rum, carefully add it to the skillet and allow it to cook for another minute, then remove from heat.

5. Make the cream filling

In a separate bowl, whip heavy cream with vanilla extract and powdered sugar until soft peaks form. Gently fold in the caramelized banana mixture and cinnamon until well combined.

6. Fill the crust

Pour the banana cream filling into the cooled pie crust, spreading it evenly. Refrigerate for at least 2 hours to set.
