Prepare the Shrimp
Rinse the jumbo shrimp under cold water and pat dry with paper towels. Set aside.

Make the Breading
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Mix well.

Coat the Shrimp
Dip each shrimp into the buttermilk, allowing any excess to drip off. Then coat the shrimp in the flour mixture, pressing lightly to adhere. Shake off any excess flour.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches, frying for about 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Serve the fried jumbo shrimp hot with lemon wedges on the side.
