Prepare the Marinade
In a mixing bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and minced ginger. Whisk until well combined.

Marinate the Chicken
Place the boneless chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1-2 hours.

Cook the Chicken
Heat a large skillet or grill over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook for 5-7 minutes on each side, or until the chicken is cooked through and has a nice char.

Make the Teriyaki Sauce
In a small saucepan, combine the reserved marinade, cornstarch, and water. Bring to a simmer over medium heat, stirring constantly until the sauce thickens.

Slice the cooked chicken and drizzle the teriyaki sauce over it. Garnish with sliced green onions and sesame seeds. Serve with rice or vegetables.
