Cook the Tofu and Mushrooms
In a non-stick skillet, lightly sauté the tofu and mushrooms over medium heat until golden brown. Remove from heat and let cool.

Soak the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft, then lay it flat on a clean surface.

Assemble the Rolls
On the lower third of the rice paper, layer a few lettuce leaves, some sautéed tofu and mushrooms, julienned cucumber, pickled carrot, and daikon. Fold the sides over the filling and roll tightly from the bottom up.

Repeat
Continue the process until all the ingredients are used up.

Serve
Serve the summer rolls with a dipping sauce of your choice, such as peanut sauce or hoisin sauce.
