Prepare the Filling

In a mixing bowl, combine the peeled and deveined tiger shrimp, cooked rice noodles, julienned carrots, julienned cucumbers, and fresh cilantro. Season with salt and black pepper. Mix well.

Soften Rice Paper Wrappers

Soak the rice paper wrappers in warm water for about 10 seconds until they are soft and pliable. Remove and lay them flat on a clean surface.

Assemble the Rolls

Place a spoonful of the shrimp mixture onto the bottom third of the rice paper wrapper. Fold in the sides and roll tightly to enclose the filling. Repeat with remaining wrappers and filling.

Coat the Rolls

Dredge each roll in all-purpose flour, then dip in the beaten egg, making sure to coat evenly.

Fry the Rolls

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Fry the rolls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve

Serve the fried shrimp rolls hot with plum sauce on the side for dipping.
